We are very pleased to announce that from this moment forward, all Wildcraft Beers on the pump will be Gluten Free... They actually have been for some time but we wanted to gauge reactions, see if the process made a difference to taste, mouthfeel or nose... It turns out, it doesn't!
The main question we get asked is 'how'? The barley and wheat we use still contains gluten so how can the finished product be without?
The answer is a simple one, a product called 'Protese GF, its an enzymatic solution for sensible protein degradation which in brewing terms, means it clumps proteins and drops them out of the beer, allowing a clearer, brighter finished product.
The side effect is that it also degrades gluten, meaning a beer that starts with it, finishes without.
How do we know?
We have to send samples of beers off to a laboratory, where they do tests to determine the amount of gluten is left in parts per million. UK law states that anything that registers under 20ppm can be certified as GF, we are pleased to say that we haven't had a single test that hasn't come back showing that we have under 10ppm.
New pump clips, with 'gluten free' stated on them are being rolled out in the next few weeks...
